Apple Pie Recipe
Pie Dough
2 1/4 cups flour
1/2 tsp kosher salt
1/4 tsp cinnamon
1 stick of unsalted butter
1/4 cup shortening
5 tbsp ice water
I used my food processor. I mixed dry ingredients first, then added the butter and shortening. Once it looks crumbly (like corn meal) I added water. I separated into 2 flattened discs then refrigerated for 30 min.
Filling
2/3 sup sugar
2 tbsp flour
1/2 tsp cinnamon
8-9 med granny smith apples
1 tbsp lemon juice
1 tbsp butter, cubed
Mix all ingredients except for the butter, in a bowl. Remove dough from fridge roll one out to fit pie dish. Fill with apple mixture then top with cubes of butter. Next roll out second dough disc and place on top of apple mixture. Mend top and bottom layer of dough, pinch edges, and make slits. I used excess dough to form my apple shape to top the pie. Then I brushed the top with heavy cream and topped with raw sugar. Bake at 400 for approx. 1 hour. You should cover your edges after 20 min or so.
